I note we can say on the sales manager we have refunded a complete order, but what if we only want to have a partial refund. How do we do that?

Hi,
Customers do this one of two ways:
1. Our Merchants have created a partial refund status with custom status's.
2. Our Merchants refund the complete order and process a new correct order
